Sometimes eaten raw dipped in sugar or salt, rhubarb is usually eaten cooked. It's delicious combined with other fruit like strawberries and apples. It can be stored in the refrigerator only a few days before it starts to wilt. To make compote, cook in a little water at moderate heat until the fibres soften, about 20 minutes. Add sugar to taste.
